Basic White Butter Cake

This is my favorite white cake. It tastes like a giant moist sugar cookie. Other flavors can be added to create a different flavored cake.
  • 2 cups cake flour
  • 1 cup all-purpose flour
  • 2 1/4 tsp baking powder
  • 1 1/4 tsp salt
  • 2 cups of sugar
  • 2 sticks of butter
  • 6 egg whites or 1 cup
  • 1 tbs pure vanilla extract
  • 1 1/4 cup whole milk/half and half
  • 1/4 cup vegetable oil
  1. Shift together flour, baking powder and soda, and salt.
  2. In a mixing bowl cream together butter and sugar for 5-8 minutes.
  3. Add oil.
  4. Add eggs one at a time till mixed and scrape down sides often.
  5. Mix vanilla extract with milk/half and half.
  6. Set mixer on low/medium-low, add flour and milk mixture, alternating until mixture is just combined.
  7. Bake in two 9-inch round pans at 350 degrees for 35-45 minutes or until tooth pick comes out clean or sides of cake starts to pull away from pan.
