This is my favorite white cake. It tastes like a giant moist sugar cookie. Other flavors can be added to create a different flavored cake.
- 2 cups cake flour
- 1 cup all-purpose flour
- 2 1/4 tsp baking powder
- 1 1/4 tsp salt
- 2 cups of sugar
- 2 sticks of butter
- 6 egg whites or 1 cup
- 1 tbs pure vanilla extract
- 1 1/4 cup whole milk/half and half
- 1/4 cup vegetable oil
- Shift together flour, baking powder and soda, and salt.
- In a mixing bowl cream together butter and sugar for 5-8 minutes.
- Add oil.
- Add eggs one at a time till mixed and scrape down sides often.
- Mix vanilla extract with milk/half and half.
- Set mixer on low/medium-low, add flour and milk mixture, alternating until mixture is just combined.
- Bake in two 9-inch round pans at 350 degrees for 35-45 minutes or until tooth pick comes out clean or sides of cake starts to pull away from pan.
